The reel deal

Whether it's delicate sea bass, a zingy prawn cocktail or a hearty fish pie, we're huge fans of all things fish and shellfish here at Great British Chefs – so much so that we've dedicated the whole of October to seafood. We've been busy dreaming up incredible new recipes – there's our Amalfi scialatielli with a savoury anchovy sauce, for example, as well as our show-stopping Louisiana seafood boil – and making sure you have all the tips and tricks you need to master seafood cookery.

Journey behind the scenes of some of the most celebrated and exciting restaurants in the country, as top chefs provide a glimpse into the closely guarded secrets of their kitchens.

Cosy season

September might be an in-between month, but when October rolls around we think it's high time to fully embrace cosy autumn. It's the season of hearty stews, soups and braises, warming dishes perfect for the chillier nights. Root vegetables like butternut squash, pumpkin and heritage carrot are coming into their peak, alongside mussels and pears. See all the seasonal delights in our guide and whip up a squash feast with our recipe collection – we're starting with Will Bowlby's creamy butternut squash makhani.

Sugen Gopal

An upbringing in the kitchen of his family's restaurant in Malaysia inspired Sugen Gopal to bring those flavours to the UK. Today, he celebrates the humble Malaysian-Indian roti canai at his Roti King restaurants, and Malaysian-Tamil cooking at his restaurant Gopal's Corner.
