Barbecued pineapple and cheesecake ice cream

Ingredients

  • 1 pineapple, large
  • 2 limes, zested and juiced
  • 1/4 pineapple
  • 2 limes, finely zested
  • 1l pineapple juice
  • 1 lime

Store Cupboard

  • 450g of maple syrup
  • 1 pinch of salt
  • 4 egg yolks
  • 175g of caster sugar
  • 45g of coconut purée
  • 1 vanilla pod
  • 50g of sugar
  • 100g of sugar
  • 100g of flour
  • 1 pinch of salt

Dairy

  • 150g of butter, toasted to beurre noisette
  • 300ml of milk
  • 75g of butter

Cheese

  • 250g of cream cheese

Beverages

  • 30ml of Malibu
  • 50ml of water
