Damson ketchup

Ingredients

Fruit & Vegetables

  • 80g of cooked beetroot, (approx. 1 medium beetroot)
  • 1 red onion, diced
  • 350g of damsons, washed and any insects removed

Oils & Vinegars

  • 1 tbsp of olive oil
  • 30ml of red wine vinegar

Spices & Dried Herbs

  • 1 star anise
  • 2 cloves
  • 1/2 cinnamon stick

Salad & Fresh Herbs

  • 1 bay leaf

  • 80g of sugar
  • salt

  • 50ml of water
