Gochujang roast chicken with kimchi rice stuffing

Ingredients

Fresh Meat

  • 1 free-range chicken

Spices & Dried Herbs

  • 2 tsp gochujang
  • 20g of ginger, peeled and finely chopped

Fruit & Vegetables

  • 15g of garlic, finely grated
  • 5 spring onions, whites and greens separated and sliced
  • 2 spring onions, finely sliced

Oils & Vinegars

  • 1 tsp vegetable oil
  • 20g of vegetable oil
  • 10g of sesame oil
  • 1 tsp rice vinegar

Store Cupboard

  • 100g of brown rice
  • 450ml of chicken stock
  • sea salt

Speciality Ingredients

  • 150g of kimchi, plus 100g of the liquid from the jar

Salad & Fresh Herbs

  • 1/2 bunch of coriander, roughly chopped

Cooking Sauces

  • 1 tsp light soy sauce
