1 whole frozen duck, about 2.6kg in weight (Andrew uses ducks from Silver Hill farm)
Store Cupboard
2 tbsp of sugar
50g of salt
hoisin sauce, or plum sauce
Spices & Dried Herbs
100g of Chinese five-spice powder
Speciality Ingredients
2 tbsp of Shaoxing wine
3 tbsp of maltose
12 Chinese pancakes
Oils & Vinegars
2 tbsp of Chinese red vinegar
Fruit & Vegetables
1 bunch of spring onions, finely sliced
1 cucumber, finely sliced
