Ingredients

Fresh Meat

  • 1 whole frozen duck, about 2.6kg in weight (Andrew uses ducks from Silver Hill farm)

Store Cupboard

  • 2 tbsp of sugar
  • 50g of salt
  • hoisin sauce, or plum sauce

Spices & Dried Herbs

  • 100g of Chinese five-spice powder

Speciality Ingredients

  • 2 tbsp of Shaoxing wine
  • 3 tbsp of maltose
  • 12 Chinese pancakes

Oils & Vinegars

  • 2 tbsp of Chinese red vinegar

Fruit & Vegetables

  • 1 bunch of spring onions, finely sliced
  • 1 cucumber, finely sliced
