Red wine pickled pear, Stilton and chestnut tart with red onion and orange relish

Ingredients

  • 2 small pears, (not too ripe)
  • 1 garlic clove
  • 400g of red onion, sliced
  • 1/2 orange, zest and juice
  • 1 onion, finely diced
  • 2 garlic cloves, finely chopped

  • 300ml of red wine

  • 1 sprig of rosemary
  • 3 tbsp of sugar
  • 80ml of distilled pickling vinegar
  • 100g of soft brown sugar
  • 270g of filo pastry, (one packet)

  • 1 cinnamon stick
  • 1 cinnamon stick
  • 1 handful of sage leaves, cut into chiffonade
  • 12 sage leaves

  • 1 dash of olive oil
  • vegetable oil
