Ingredients

2 small pears, (not too ripe)
1 garlic clove
400g of red onion, sliced
1/2 orange, zest and juice
1 onion, finely diced
2 garlic cloves, finely chopped

300ml of red wine

1 sprig of rosemary
3 tbsp of sugar
80ml of distilled pickling vinegar
100g of soft brown sugar
270g of filo pastry, (one packet)
Spices & Dried Herbs
1 cinnamon stick
1 cinnamon stick
1 handful of sage leaves, cut into chiffonade
12 sage leaves
Oils & Vinegars
1 dash of olive oil
vegetable oil
Salad & Fresh Herbs
1 tsp thyme leaves

40g of butter, melted

80g of Stilton
