Ingredients
Fruit & Vegetables
250g of new potatoes, cut into 5mm thick slices
250g of purple potatoes, cut into 5mm thick slices
1 tbsp of garlic, finely chopped
1 onion, finely chopped
Oils & Vinegars
2 tbsp of vegetable oil
2 tbsp of rapeseed oil
Spices & Dried Herbs
1 tbsp of cumin seeds
1 tbsp of ginger, finely chopped
2 green chillies
1 tsp turmeric powder
1 cinnamon stick, 2cm in length
1 cardamom pod
1/2 tsp cumin seeds
1/2 tsp ground coriander
1/4 tsp ground cumin
1/4 tsp garam masala
1/4 tsp turmeric powder
Salad & Fresh Herbs
1 bay leaf
10 mint leaves, finely sliced
coriander cress
Cooking Sauces
1/2 tsp ginger and garlic paste

1/2 tbsp of tomato purée, mixed with 2 tbsp water
