1.3kg unsmoked gammon joint
60g of bacon, chopped
Fruit & Vegetables
2 carrots, peeled
2 onions, peeled
4 garlic cloves, bruised
3 celery sticks
600g of sweet potato
300g of Brussels sprouts
Salad & Fresh Herbs
2 bay leaves
4 sprigs of thyme
1 sprig of fresh rosemary, finely chopped
Spices & Dried Herbs
12 cardamom pods
4 tsp ground cinnamon
2 tsp mild chilli powder
2 1/2 tbsp of five-spice powder
1/4 tsp ground cloves
1 pinch of nutmeg
Store Cupboard
100ml of soy sauce
150g of honey
1/4 tbsp of salt
1 pinch of salt
1 pinch of pepper
1 pinch of salt
Oils & Vinegars
50ml of olive oil
1 dash of olive oil
