Ingredients
25g of pine nuts
20g of Parmesan, or vegetarian hard cheese, grated
1/2 garlic clove, crushed
30g of sorrel, stalks removed
20g of basil
100ml of olive oil
lemon juice, to taste
salt
pepper
Method
1
Place the nuts, cheese, garlic, herbs and olive oil in a blender and blitz until you have a course pesto

Taste and season with salt, pepper and lemon juice
