Watercress soup with potato rösti, poached egg and black pudding

Ingredients

Fruit & Vegetables

  • 1 medium onion, roughly chopped
  • 1 celery stick, roughly chopped
  • 300g of Golden Kings potatoes, peeled and diced
  • 1 lemon, juiced
  • 4 Golden Kings potatoes, peeled

Oils & Vinegars

  • 1 tbsp of olive oil, plus extra for frying

Salad & Fresh Herbs

  • 250g of watercress
  • 1 bunch of watercress

Store Cupboard

  • 700ml of vegetable stock
  • black pepper
  • 4 large eggs

Spices & Dried Herbs

  • fine salt
  • 1 tsp fine salt

Fresh Meat

  • 100g of black pudding
