White plantain curry

Speciality Ingredients
1 tbsp of coconut oil, or vegetable oil
Fruit & Vegetables
2 plantains, ripe, almost completely black plantains, peeled and sliced
1 red onion, peeled and finely sliced lengthways
2 garlic cloves, peeled and sliced
1/2 tsp chilli powder, or spicy Sri Lankan curry powder
Spices & Dried Herbs
10 curry leaves
2 green chillies, slit lengthways
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp ground turmeric
Salad & Fresh Herbs
1/2 tsp coriander seeds
1 lemongrass stalk, bruised
Store Cupboard
1 tsp salt, or to taste
100ml of coconut milk
