Zigni berbere (spicy Eritrean beef stew)

Ingredients

Fresh Meat

  • 600g of beef shin, diced

Oils & Vinegars

  • 4 tbsp of olive oil

Fruit & Vegetables

  • 1 onion, diced
  • 1 red pepper, quartered then sliced
  • 2 garlic cloves, sliced
  • 3 plum tomatoes, chopped

Spices & Dried Herbs

  • 1 knob of ginger, grated
  • 2 tbsp of berbere
  • freshly ground black pepper

Store Cupboard

  • 2 tbsp of tomato purée
  • 500ml of beef stock
  • salt, to taste
