Black olive tapenade, orange and chicken tray bake

Ingredients

Fruit & Vegetables

  • 3 red onions, sliced (approx. 600g)
  • 500g of new potatoes
  • 2 oranges, zested, plus 100ml of juice
  • 4 garlic cloves, minced

Oils & Vinegars

  • 2 tbsp of olive oil
  • 3 tbsp of olive tapenade

Fresh Meat

  • 8 chicken thighs

Salad & Fresh Herbs

  • 5 sprigs of thyme
  • 1 tsp thyme leaves

Store Cupboard

  • 5 tbsp of flaked almonds
  • 100ml of vegetable stock
  • 1 tbsp of honey
  • salt, to taste

Spices & Dried Herbs

  • 1 tsp harissa
