Dark chocolate, almond and cherry Christmas cake

In a stroke of pure genius Dannii adds dark chocolate to this Christmas cake recipe which works beautifully with the Urban Fruit cherries. As if Christmas cake could get any better!

When I think of Christmas cake, I think of dried fruit, booze and Christmas spices. For me, that is what makes a Christmas cake.

Having never really been a fan of traditional Christmas cake, but having always been a fan of cake, I like finding ways to add a little new twist to it. As long as there is some fruit, cinnamon and my favourite tipple in it, then it is suitable for Christmas for me.

As if there isn't enough chocolate involved at Christmas time, I have added a little bit of dark chocolate in to the mix as dark chocolate and cherries is a match made in heaven.

Method

Preheat the oven to 170C/350F

In a bowl, add the almond flour, coconut flour, cherries, chocolate, salt, baking soda and the spices and mix well

In a separate bowl, mix together the coconut oil, rum, maple syrup, eggs and vanilla and add to the dry ingredients. Mix well

Grease two 5 inch spring form pans and divide the mixture between them. Bake for 40 minutes

Whilst the cake is cooking, make the icing by mixing together the yoghurt, maple syrup and vanilla

When the cakes are cooked and completely cooled, add some of the icing to the top of one and put the other cake on top and add the rest of the icing. Add some extra cherries
