Great British Chefs is a team of passionate food lovers dedicated to bringing you the latest food stories, news and reviews as well as access to some of Britain’s greatest chefs. Our posts cover everything we are excited about from the latest openings and hottest food trends to brilliant new producers and exclusive chef interviews.

In the 1970s, Doves Farm founders Clare and Michael Marriage decided to go organic with their mixed arable farm, a bold move that made them one of the first organic wheat farms in the country. Today, Doves Farm has turned into a 350-acre organic operation and made the business the UK's number one organic flour brand. But that's not all; around twenty years ago they also started growing rye, spelt and einkorn, emmer, rare ancient grains that provide a completely different flavour profile to flour and which had, until their intervention, all but disappeared from the UK.

With an enormous twenty-four organic flours in their range today, Doves Farm truly have a product for every baker and every recipe, with everything from plain white flour to malthouse bread flour, as well as ancient grain breakfast flakes and fruity oat biscuits.

We've been working with Doves Farm to create some exclusive GBC Kitchen recipes, showcasing the different ways in which their organic flours can be used for delicious sweet treats. Check out the recipes below to start making use of the range and learn more about Doves Farm with our special features.

Why you should be baking with organic flour?

Better for our planet and our bakes, switching to organic flour is a no brainer. From how it’s made to where you can find it, we’ve teamed up with Doves Farm to take a look at all your need-to-knows.

Ultimate festive bakes

What better way of getting into the Christmas spirit than to spend time in the kitchen, creating some incredible festive bakes. These three exclusive recipes all make use of Doves Farm's broad range of organic flours and are certain to go down a treat with guests. While Doves Farm organic spelt flour is used in the mince pies and cookies for an extra tender pastry, our cranberry and pistachio stollen makes use of Doves Farm organic strong white bread flour to give it a particularly chewy texture.

Organic pioneers

As well as leading the way when it came to the organic movement in the 1970s, Doves Farm was also responsible for reintroducing rare ancient grains to the UK that had all but disappeared. Today, the popularity of the heritage grains is fast on the rise around the country as a result of their work. Here, we've taken a closer look at Doves Farm's story and ancient grains.

Delving into the history of hot cross buns

Hot cross buns have a long history, having been eaten in the UK for centuries. We look at the story of the much-loved Easter treat.

Easter bakes

We've given Doves Farm organic flours starring roles in these three delicious recipes. The apple and cinnamon hot cross buns – which are perfect for Easter – give the organic white spelt flour a starring role, while the indulgent chocolate and hazelnut roulade uses its organic oat flour and cocoa powder. Our nostalgic, comforting crumble is made of a rhubarb and apple filling, topped with a crumble made from organic Doves Farm rye flour, brown sugar, cinnamon and hazelnut praline. The perfect weekend bake.
