The Philippines is known for its bright, vinegary adobos, rich and fatty lechon and colourful ube desserts. But outside of its few headline dishes, as you’d expect of any other country with a population of almost 120 million, the cuisine is highly regional and ethnically diverse.

Some regions’ cuisine are more influenced by Hokkien cooking, others by Malaysian, others by Indian or Spanish ingredients. While there are some constants – rice and coconut are beloved across the nation – one of the joys of Filipino cooking is how it changes city by city, and throughout the diaspora. Filipino-American cooking has embraced ube, and Filipino-Chinese cuisine gave rise to lumpia and siomay.
