There aren’t many things that will immediately feel like you’re six-years-old again like eating an ice cream sandwich. There’s no way to do it elegantly, so just give up and accept the fact that these are a delicious but sticky affair.
Ice cream sandwiches around the world are generally split into wafer sandwiches, and bread sandwiches. The exception, of course, being America, where chocolate chip cookies are often used to make ‘chipwiches’. In the UK, ice cream is generally sandwiched between two biscuit-like wafers or soft chocolate biscuits, and the filling is usually vanilla. But in Singapore, ice cream sandwiches are made by folding a thick, fluffy slice of multicoloured sandwich bread around a block of chocolate chip ice cream, typically sold from carts. In Italy they also favour a bready sandwich, the incredible brioche con gelato.
