Having trained in top kitchens in his native Spain, José Pizarro is now one of the most influential Spanish chefs in the UK. With three London restaurants all based around his passion for authentic Spanish cooking, the focus is clearly on quality and simplicity: great ingredients, regional wines and, of course, excellent sherry.
José's restaurants hark back to the tapas bars and casual restaurants of Spain, with the menus offering small and large dishes designed for sharing.
A classic tapas choice includes his recipe for homemade croquettes, or Croquetas caseras, with their crisp outer shell and creamy centre. For a more substantial meal, his Bacalao recipe results in succulent flaky cod in a vibrant tomato and pepper sauce. For an indulgent dessert, his Tocino de cielo recipe is full of dark caramel flavour; don't be fooled by its rather savoury name, which translates as 'heaven's bacon'.
