King prawn Nyonya curry laksa

Malaysian recipes

Malaysian cooking brings together Malay, Indian and Chinese cooking techniques and ingredients, as well as indigenous traditions like tuak and glutinous rice. It’s known for being colourful – bright blue nasi kerabu, sunshine yellow nasi kunyit – and extremely delicious. If you love coconut, noodles and can handle some heat, you’re in for a treat.

It’s hard to pick a single stand-out Malaysian dish. If you asked a Malaysian, they might pick nasi lemak ayam, a coconut milk-infused rice served with chicken, peanuts, cucumber, eggs and crunchy ikan billis (anchovies). Outside of Malaysia, laksa is probably the most widely known Malaysian dish. When made well, with springy noodles and a fragrant, shrimp-forward broth, it’s unbeatable comfort food. But, if you truly feel like a challenge, try your hand at making the unassuming roti canai. Watching Malaysian chefs effortlessly flip the flatbreads until they are paper thin and then attempting to do the same is truly humbling.
