When it comes to soup, potatoes are life savers. They form the starchy backbone of vegetable soups that would otherwise be thin and watery. They also act as little flavour bombs, soaking up delicious stocks and spices. But, as well as playing a supporting role in soup, potatoes are frequently the main character.
The most famous potato soup in the UK is undeniably leek and potato - and we have a few variations on the classic for you to try. Tom Booton serves his version with crispy potato doughnuts, while Jane Blackmore adds cheese to hers for extra savoury depth. But, there are also lots of less well-known potato soups such as Vichyssoise, a creamy, chilled French leek and potato soup that’s perfect for a summer lunch time. The bright orange sweet potato also shouldn't be forgotten about - it brings a delicate sweetness to simple dishes, and makes a colourful substitute for its pale cousins.
