This collection of squid recipes features a wonderful range of dishes for this fantastic cephalopod. Despite being a brilliant ingredient, cooks are often put off trying this at home for fear of a rubbery, overcooked disaster. Squid needs to either be cooked very quickly, or long and slow.
In British waters, the European and Atlantic squid are the most commonly caught varieties, mostly caught around Scotland. The season for squid in the UK runs from late August through to November, so enjoy fresh British squid during this time. When possible, seek out jig-caught squid, as this is the most sustainable form of fishing squid, and it is often undertaken by smaller fisheries. Fresh squid is wonderfully versatile and easy to prepare, providing a good punch of protein while also being low in fat.
