Not to be confused with sweetbreads – a type of offal from lamb or veal – this recipe collection is dedicated to sweetened breads (sometimes known as enriched doughs), from classics like pain d'epices, malt loaf and lardy cake to slightly more avant-garde inventions, like Izy Hossack's cranberry and walnut challah bread or Graham Campbell's kumquat panettone.
So often we gravitate towards cakes and pastry when we're thinking of sweet baking, but some of the most delicious treats are actually sweet breads. Classic French desserts like brioche and pain perdu are a fantastic example – check out Miranda MacDonald's rye and chocolate Easter brioche and Matt Gillan's Christmas pain perdu for interesting twists on classic recipes.
