Olives aren't just at home in a tapas spread – they're incredibly versatile, something we've been working with Fragata to prove. Their olives are grown, picked and prepared in Andalusia, with a range that includes a variety of fillings and flavours. We've been putting them to use in fantastic recipes – there's our hot and dirty martini with fermented tomato sauce (using olive brine and plump olives as a garnish), as well as a zingy olive salsa which we've served with marmalade-glazed chicken kebabs. Chef Chris Shaw, meanwhile, uses Fragata's black and anchovy-filled olives in a potatoes puttanesca and their garlic-filled olives in a focaccia with piri piri peppers.
