Mana is a very special restaurant indeed. Headed up by chef Simon Martin, guests can experience course after course of the best fresh produce the UK has to offer, cooked using a variety of intricate and often Japanese techniques that tease out every last bit of flavour from whatever's on the plate. No wonder it won Machester's first ever Michelin star.
While the vast majority of fresh produce is sourced from around the UK, Simon works with Stuart Turner (known as 'Sushi Stu') and his business SushiSushi to source a small selection of truly artisanal products from across Japan.
