Almond milk is becoming more and more popular as people turn their backs on dairy in favour of a healthier and more sustainable lifestyle. One of the easiest ways to do this is by substituting the milk on your morning cereal or in your afternoon tea with a milk replacement. The pasteurized versions available in the supermarkets may have a long shelf life, but are often a little underwhelming in the taste department. Fortunately, it is very simple to make your own.
Variations
If you prefer a sweeter taste, try adding a little natural sweetener such as honey or maple syrup to the almonds. You can also add a couple of dates for an even healthier option.
You could also try flavouring the milk with spices such as cinnamon or vanilla.
Uses
You can use almond milk the same as you would regular milk. It’s great in porridge, on cereal and in smoothies like Peter Gordon’s Blueberry smoothie. You could also try making healthy, fat-free almond milk ice cream or even custard, as in Deb Durrant’s Strawberry and pansy tart.
