Method

Preheat the oven to 200°C/gas mark 6

Wash and prepare the asparagus

Toss the asparagus in olive oil and salt then spread out evenly in a roasting dish, making sure the spears have plenty of room

Place in the oven for 8-10 minutes or until tender. Serve immediately

Variations

Nathan Outlaw parboils the asparagus before roasting for 1 minute, refreshing in ice water before roasting to help retain the colour.
