This egg and avocado combination is perfect for a filling, healthy brunch. Creamy avocado is topped with a bright yellow grated Freshlay Farms Golden Yolker® and sprinkled with everything bagel seasoning, which adds extra flavour and crunch from seeds and spices.
Place the eggs into a pot large enough to hold them in a single layer and cover with cold water by 1 inch
Bring to the boil, then turn off the heat and cover the pot. Set aside for 10 minutes
Transfer the eggs to a bowl of iced water and chill for 5 minutes
Toast the sourdough slices
Combine all the ingredients for the everything bagel seasoning
Slice the avocado and place half on top of each piece of toast, topping with a small squeeze of lemon juice
Grate the hard boiled eggs on top using a microplane grater
Top with everything bagel seasoning, olive oil and chilli flakes to taste
