Black olive and roasted garlic tapenade

This simple, garlicky tapenade is made by roasting a whole bulb of garlic until it's soft and sweet, and then blending the gloves with plenty of good quality olives and some anchovies, for an extra savoury punch.

Method

Place the garlic cloves in a roasting tray. Drizzle with olive oil and place into the oven. Roast for 20–30 minutes, or until the garlic is soft

Combine all the ingredients for the tapenade in a small blender with the roasted garlic cloves (skins removed) and some black pepper and whizz to combine
