This Jeeves and rhubarb Collins is a spectacularly refreshing cocktail for summer, using craft rhubarb soda to top off the refreshing trio of Jeeves, dry gin and lemon juice. Quick and easy to whip up, this will make the perfect tipple for lazy summer garden parties. When rhubarb is out of season in the autumn and winter months, try swapping rhubarb soda for apple or pear.

Add all ingredients (except the rhubarb soda) to a highball glass. Half-fill with ice

Stir, top with rhubarb soda, then add more ice. Garnish with lemon and serve
