Lemon upon lemon upon lemon – this dish, named '8-10-2006' in the restaurant after the date Andrew became a chef is a celebration of everything citrus. The marmalade does take a while to create, but it has a wonderful flavour and can be used in all sorts of other dishes (plus simply spread on toast). You can make individual cakes like Andrew does here or a single, larger cake to keep things simple. Whatever you do, it's going to taste delicious.
