The Monte Cristo is a ham and cheese sandwich with a difference - while the inside is a regular ham and cheese toastie, the whole sandwich is dipped in egg and fried, like eggy bread/French toast. Often, the top of the sandwich is given a light dusting of icing sugar, or glazed with honey, to add a slightly sweet finish. Sometimes, it’s dipped in batter and deep fried but we prefer this pan-fried method.
Spread two slices of the bread with mayonnaise, and two with Dijon mustard. Divide the ham and cheese between the sandwiches and close them, pressing gently
Melt the butter in a frying pan
Dip each sandwich into the beaten egg, then add to the frying pan (one at a time, unless your frying pan is large enough to accommodate both) and cook for a minute or two, until crisp and golden
Turn the sandwich(es) over using a spatula, and cook until golden on the other side
Once cooked, transfer the sandwiches to a plate and drizzle with a little honey to serve
