Peach and lime leaf lassi

This peach and lime leaf lassi is super simple to put together. Making the lime leaf syrup separately allows you to adjust the level of sweetness depending on your tastes and the ripeness of your peaches. It's best when made with full fat buttermilk and full fat yogurt for extra creaminess and thickness. Any leftover lime leaf syrup will keep in the fridge for 1-2 weeks in an airtight container in the fridge.

Combine the caster sugar, water and lime leaves in a saucepan and bring to a boil, then turn off the heat and allow to cool to room temperature

Puree the peaches, yoghurt, buttermilk, salt and lime juice in a blender, then stir in lime leaf syrup to taste - start with 1 tbsp and work up

Pour into a glass and top with chopped pistachios to serve
