This unabashedly pink Pimiento Paloma from Max Venning is made with vivid pink grapefruit soda, tart lime juice and tequila. It also contains a touch of Fragata pimiento-filled olive brine, for a subtle savoury note, and is finished with two pimiento olives.
Mix all the ingredients except the soda over an ice spear or cubed ice, stir to combine and dilute a little. Top gently with the soda and stir to combine. Garnish with two pimiento olives on a cocktail stick
