Pineapple and lime rum punch with spiced citrus sugar

This refreshing pineapple cocktail is finished with ginger ale and garnished with a whole bird's eye chilli. It comes together in a flash and has a fun spiced sugar decoration.

Method

Begin by making the spiced citrus sugar. Add the orange and lemon zest to the 100g sugar, then rub the zest into the sugar until the zest is fragrant and begins to release its oils

Mix in the cayenne pepper

Take a lime wedge and run it over one secion of the glass for the sugar to stick to

  • 1 lime, cut into wedges

Press that section of the glass into the spiced citrus sugar, pressing more sugar in as needed to fill in any gaps

Use a piece of kitchen paper to neaten up the edges of the citrus sugar then begin the cocktail base

For the punch, add the pineapple juice, white rum and lime juice to a cocktail shaker filled with ice. Shake well

Fill each of the glasses with ice, then divide the shaken pineapple base between each glass

  • 1 handful of ice cubes

Top up each of the glasses with ginger ale, then garnish with a red chilli before serving
