Salted mango daiquiri

This refreshing salted mango daiquiri is the colour of liquid gold, and the perfect tart refresher for warm days. Will Bowlby used leftover green mango to make the salted mango cordial, and Discarded's Banana Peel Rum to make the cocktail. Any leftover cordial is just as delicious with sparkling water or iced tea for a sweet pick-me-up.

Salted mango cordial

Method

Cut the mango into small pieces

Combine all the ingredients together and simmer over a low heat for 30 minutes, covered with a cartouche or a lid

Strain through a fine mesh strainer

Shake 45 ml mango cordial and 45 ml rum with ice. Double strain and serve in glasses rimmed with amchur powder
