These eggs are fried in ghee and turmeric and topped with fried onions flavoured with garam masala. They’re garnished with green chilli and coriander, and are as delicious served over steamed rice as they are on a soft, warm naan.
Heat a frying pan over medium-high heat and add a dash of oil. Add the onions and cook until soft and beginning to char at the edges, stirring regularly. Add a tablespoon of water and the garam masala and cook out, stirring constantly, for a few minutes
Serve the eggs on top of the naan with the onions, green chilli and coriander scattered on top
