Market towns are always nice to pootle around in, but few are home to restaurants of the same calibre as Docket No.33. Opened by Stuart and Frances Collins in 2017 (Stuart as the head chef, Frances as the restaurant manager), it offers a tasting menu of local, seasonal ingredients sourced from Shropshire, Cheshire and the Welsh Borders.
The simple, pared back interior makes diners feel instantly relaxed – something a world away from the multi-Michelin-starred restaurants Stuart has worked in previously. There’s only a single tasting menu on offer to allow the small team to focus purely on the approximately nine dishes being served, making them the best they can be. While ingredients are sourced locally, there are plenty of international influences, thanks to Stuart’s time working in the USA and Middle East.
Service is particularly warm and welcoming and you can tell that this is a small, independently owned restaurant filled with passionate staff. The menu can change weekly or even daily depending on what’s available and at its best, but always showcases classical techniques and expert cookery in every dish. There are wines available by the bottle or you can opt for a very affordable drinks pairing to complement each course.
