Semi-dried tomatoes are tomatoes that have been dried out about halfway, so their sweetness and flavour is intensified but they still retain some natural moisture. This distinguishes them from sun dried tomatoes, which have been completely dried, so that no moisture remains.
Semi-dried tomatoes are incredibly versatile - try them in salads and sandwiches, or stir a handful through pasta. They also make a great addition to tarts, quiches and pizzas, or try chopping them finely into a salsa. They can also be baked into bread or muffins, paired with cheese or used to pep up grain-based salads or couscous.
Semi-dried tomatoes can be stored in an airtight container for 3 days in the fridge, or up to two weeks covered in oil.
