The fact that Michelin went ahead with their announcement for 2021 is a topic of controversy in itself. While receiving stars is always a fantastic boon for chefs and restaurants, there are questions about just how rigorous the testing could have been during a year when the vast proportion of hospitality has been closed. However, whatever you feel about Michelin, you can't deny it's one of the biggest events in the hospitality industry, and for all its critics it still means a huge amount to chefs and restaurants across the world.
The ceremony was virtual this year, without the usual glitzy reception where the UK and Ireland's best and brightest culinary talents come together under one roof.Things kicked off with a few special awards – Noble Holywood won the Service Award; Maison Bleue won the Sommelier Award; Kray Treadwell of 670 Grams won the Young Chef Award and Ross Lewis at Dublin's Chapter One won the Mentor Chef Award.
This year saw 22 restaurants awarded new star ratings, including 17 new one-star restaurants, 3 new two-star restaurants (A Wong, Da Terra and Restaurant Story) and 2 three stars (Core by Clare Smyth and Hélène Darroze at The Connaught).
The new one-star restaurants for 2021 were Muse (London), Osip (Somerset), Shaun Rankin at Grantley Hall (Yorkshire), Dede (Baltimore, Co. Cork, Ireland), The Latymer (Surrey), Hide and Fox (Kent), Behind (London), Roots (York), Cail Bruich (Glasgow), Hjem (Northumberland), Cornerstone (London), Davies and Brook (London), Outlaw's New Road (Cornwall), Benares (London), Casa Fofo (London), Pea Porridge (Bury St Edmunds, Suffolk), Thomas Carr 1873 (Devon) and Sola (London).
2020 was of course difficult for everyone (with 2021 showing no signs of easing up), but the hospitality industry has been hit the hardest during the pandemic. Countless restaurants have had to close for good – including those with Michelin stars. The Ledbury and The Greenhouse in London (both with two Michelin stars) shut up shop, while Restaurant Nathan Outlaw closed and reopened as Outlaw's New Road, a more casual, relaxed affair than the two-starred fish cookery it was known for, albeit with the same world-class produce at its disposal.
In the world of one-star restaurants, we had to say goodbye to Texture, Roganic, Mews, The Square, Wilks, Thomas Carr @ The Olive Room (although Thomas reopened and gained a star at Thomas Carr 1873), Braidwoods and Restaurant James Sommerin. Alyn Williams at The Westbury also closed at the end of 2019 after Alyn Williams himself was dismissed by the hotel management (for ridiculous reasons, we hasten to add!), and Josh Eggleton's The Pony & Trap has closed to relaunch itself as a community food hub.
Umu also went from two stars to one star, and The Black Rat in Winchester lost its star, along with Aquavit, Tim Allen's Flitch of Bacon, Social Eating House and Red Lion Freehouse.
